Curriculum Vitae – Simone Stella

Education
o 1999: Degree in Veterinary Medicine at the University of Milan. Title of the thesis: “Evaluation of the number of Salmonellae in fresh sausages and evaluation of a new medium for the isolation of Salmonella spp.”.
o 2002: PhD in “Control of total quality in the production of foods of animal origin”. Title of the thesis: “Bone taint in bovine meat: aethiological and pathogenetical hypotheses”.


Research activity
o Researcher (from 2001), and Associate Professor (from 2019) at the University of Milan – Department of Veterinary Science for Health, Animal Production and Food Safety – Laboratory of Inspection of food of animal origin.
Research activity concerning:
- microbiology of meat and products thereof: spoilage and pathogenic microorganism, evaluation of quality parameters;
- hygienic criteria in the meat production chain, with particular interest to the presence and localization of pathogens;
- study of the diffusion of spoilage and pathogenic bacteria in dairy products;
- safety and shelf life of fish products;
- evaluation of new sanitation technologies suitable for the food industries;
- study of the growth of pathogenic bacteria in different foodstuffs by the implementation of specific mathematical models;
- Microbial risk analysis of different foodstuffs of animal origin.
Participation, as speaker, to national congresses concerning food microbiology and inspection; production of about 200 publications concerning the above described items; production of a monography concerning meat inspection and control.

Project activity

o 2002: Member of the scientific staff of the project: “Study of enzymatic activity expressed by the specific microflora in industrial fermented meat products” (PRIN call 2002).
o 2004: Member of the scientific staff of the project: “Study of spoilage microorganisms in marine fish products” (PRIN call 2004).
o 2005: Scientific manager of the research project: “Ribotyping of food pathogens and risk analysis” (FIRST call - Fondo per gli Investimenti nella Ricerca Scientifica e Tecnologica – Università degli Studi di Milano).
o 2007: Scientific manager of the research project: “Research of Campylobacter spp. and Helicobacter spp. in slaughtered broilers” (FIRST call – Università degli Studi di Milano).
o 2007: Member of the scientific staff of the project: “Food safety and preservation of vacuum packaged, cold smoked fish products produced in small and medium food industries (PRIN call 2007).
o 2008: Scientific manager of the research project: “Influence of the presence of lung lesions in veal calves on quality characteristics of meat” (PUR call – Programma dell’Università per la Ricerca – Università degli Studi di Milano).
o 2009-2010: Member of the scientific staff of the project: “Support and construction of the milk production chain in the Department of Say (Niger) as a mean to improve nutritional status of local population”. (Call financed by the Municipality of Milan).
o 2014: Scientific manager of the research project: “Multidisciplinary approach for the physical, chemical, microbiological and sensory characterization of packaged raw meat form pigs using different feeding treatments”. (Call “Fondo di ricerca giovani ricercatori”, Università degli Studi di Milano).
o 2016: Scientific manager of the research project: “Evaluation of the effect of post mortem air refrigeration on the number of thermophilic Campylobacters on broiler carcasses”. (Call “Piano Sviluppo Ricerca 2016”, Università degli Studi di Milano).
o 2017: Member of the scientific staff of the research project: “Influence of the pre-slaughter phases on the meat quality of high-value cattle” (Call “Piano Sviluppo Ricerca 2017”, Università degli Studi di Milano).
o 2020: Scientific manager of the research project: “Valorization of the local production chain of PDO Strachitunt and of the local dairies in Valle Brembana by a demonstration of the positive effect of specific microbial starters”. (Call “Gruppo Azione Locale - GAL 2020 Valle Brembana).

Teaching activity

o From 2002: Teacher at the Veterinary Medicine degree course (from 2004 as “Adjunct Professor”), for the following courses:
 Academic Years 2002-2003 and 2003/2004: “Inspection of poultry, rabbit and game meat”;
 From A.Y. 2005/2006 until 2016/2017: “Meat production chain”;
 From A.Y. 2005/2006 until today: “Inspection and control of food of animal origin”.
o From 2011 to 2016: Teacher of “Meat inspection” in the Specialization School in “Inspection of food from animal origin”.
o Member of the teaching staff of the PhD Course in “Animal nutrition and food safety” (from 2005 until 2013) and “Veterinary and Animal Science” (from 2013 until today).
o Member of the teaching staff of the Specialization School in “Technology and pathology of avian, rabbit and wildlife species”.
