Value-added products through biocatalysis: TAILored GLUtamyl TRANsferases

Il progetto è incentrato sulla progettazione, l’ottenimento e lo studio di
-glutamiltransferasi batteriche mutanti quali biocatalizzatori per la sintesi enzimatica e chemo-enzimatica di
-glutamil derivati di ammino acidi proteinogenici e non proteinogenici.
I composti che si intendono ottenere rivestono interesse applicativo come esaltatori di sapore e come costituenti di integratori alimentari; altri sono derivati di interesse cosmetico con migliorate caratteristiche chimico-fisiche ed organolettiche.
