Abstract:
1H multi-echo, chemical shift selective and 3D NMR imaging at microscopy resolution, as well as CP MAS 13C NMR spectroscopy have been applied to the study of oil and water distribution in olives, with particular attention to the seed reserve substances and their mobilization during fruit maturation.
