Throghout the generations, the human genome has adapted to the consumption of wild organisms that in turn adapted to the environment as food sources. In the Mediterranean area wild plants are rich in bioactive compounds and both wild plants and animals have favorable fatty acid profiles in terms of nutritional and health promoting properties
