Abstract:
The great diffusion of techniques relating to high-throughput analysis, as well as the
availability of a complete and high quality draft of the genome sequence of Vitis vinifera,
allowed to deepen the knowledge of grape berry development, necessary assumption in order
to satisfy the new and exigent market claims on product quality.
Through recent transcriptomic and proleomic studies it was shown that the impact of many
sources of variability (e.g. genetical and environmental) during grape development was
underrated, leading to badly generalize the results. A faclor that surely deeply contributes in
distinguishing the composition 01 the cultivars is the effect of Ihe biosynthesis relating to
secondary metabolism during the ripening.
In order to evaluate this aspect, we conducted a ,comparative analysis among four vines
characterized by different anthocyanin content both at the proteomic and metabolomic level.
We decided to locus on mature berry skin, which is the tissue regarded as the richest as far as
it concerns secondary metabolism.
The integration of the results deriving from 2-DE gels LC-ESI-MS/MS and GC-MS
chromatograms relative lo !WO subsequent vintages, emphasized how the differences in the
extent of anthocyanin biosynthesis contribute in markedly influence relevant traits glycolysis,
Krebs cycle and amino acid metabolism.
