Abstract:
Five productive chains were analyzed under productive, technological, organizational and managerial sphere to give a detailed picture of the present situation and underlined also the possible critical state of workers’ health, safety and welfare.
Results showed the lack of logistic for the family-run businesses, in fact processing presented a poor work organisation due to not continuous activities and inefficient productive layout. Moreover buildings were unsuitable about the safety, and environmental conditions were often uncomfortable for the workers. New plant design and work activities ri-organisation allowed to optimize productive efficiency and safety.
